Easy Peasy Almond Cookies

Simple, 3 ingredient cookies to make when you're in a pinch!

Ingredients

  • 1 cup almond flour or almond meal + a little extra if dough is too soft
  • 1 cup powdered sugar + 1 cup extra powdered sugar to roll cookies into before baking
  • 1 large egg white
  • 1 tsp almond extract optional, but highly recommended

Instructions

  • Preheat oven to 350 degree.
  • In a bowl, combine almond flour and powdered sugar.
  • In a separte bowl, beat egg white to stiff peaks.
  • Pour egg white into almond flour/sugar mixture and combine well.
  • Add almond extract and blend until mixture creates a soft dough.
  • Take 1 tbsp of dough mixture and roll into ball. (do this until all of the dough has been divided into dough balls).
  • Take the other cup of powdered sugar and pour onto a clean surface.
  • Roll the dough balls into the powdered sugar.
  • Form the dough balls into almond shapes and place on a parchmet-lined cookie sheet.
  • Bake for 10-15 minutes or until golden brown.
  • Cool and eat!

Notes

My old boss in Italy recommends adding tiny cubes of candied orange peel or candied ginger into the dough and then dipping the cookies into melted chocolate after they're baked!
