Make-ahead Grab n' Go Snack: 3-Ingredient Energy Bliss Balls

A quick snack you can take on the run to stay fueled and focused. They are super yummy too!

Equipment

  • Food processor
  • Plastic wrap or wax paper

Ingredients

  • 1 cup almonds soaked
  • cup dried cherries
  • ½ cup pitted dried Medjool dates about 6-7 whole dates

Instructions

  • Roast the nuts (optional). Layer almonds on a sheet pan and roast at 350°F for 10 to 12 minutes, until fragrant and golden. Allow to cool before using.
  • Combine almonds, cherries and dates in a food processor. Combine all the ingredients in a food processor. Pulse a few times just to break them up. Stir dates around if they start to clump together.
  • Process continuously for 30 seconds until ingredient turn into crumb-sized pieces. Scrape the edges of the bowl and beneath the blade to make sure nothing is sticking.
  • Process continuously until a ball is formed, 1 to 2 minutes. Continue processing for another 1 to 2 minutes, until the ingredients clump together and gather into a ball.
  • Divide dough and roll into balls. Take 1 tbsp of dough and roll into balls. Place in container or small sheet pan, cover with plastic wrap and chill in the refrigerator for at least one hour or overnight.
  • Store the balls for several weeks or in the freezer for up to 2-3 months.

Notes

You can make these with any type of nuts or dried fruit.
Experiment by adding shredded coconut, chia seeds, cacao nibs, cocoa powder, fresh ginger, ground cinnamon, ground nutmeg, ground cardamom, lemon zest, orange zest.
