Ingredients
  1. 16 oz Wild-caught Mahi Mahi
  2. 1 tbsp Coconut Vinegar
  3. 1 tsp Ginger and Garlic Paste
  4. 1 small onion (quartered)
  5. 1/2 cup Bell Peppers de-seeded and cubed (Red or Yellow)
  6. 1/2 cup Shiitake Mushrooms
  7. 1/2 cup Water Chestnuts
  8. 1/2 cup Carrots, diced
  9. 2 to 3 stalks of scallions
  10. Salt to taste
  11. 1 tbsp Fish Sauce
  12. 1/2 tbsp Extra Virgin Olive Oil
  13. 1/4 tsp crushed red pepper (Optional)
Instructions
  1. Marinate the cubed fish fillet with Ginger and Garlic Paste, Coconut Vinegar, Chili Powder for 20 minutes
  2. Once the fish is marinated, pan sear the fish for 3 minutes on each side.
  3. Heat up the wok and add in some cooking oil.
  4. Add onions, carrots, and stir fry them until aromatic.
  5. Add the mushrooms, water chestnuts and cubed bell peppers and do a quick stir.
  6. Add the fish back in, fish sauce, chopped scallion, and do a quick stir, dish up and serve hot.
