Italian Chicken Liver Pate

Immersion (hand) blender or food processor
Ingredients

chicken livers, chopped
(ideally from a pastured chicken or at least organic chicken)

shallot
chopped

tbsp
sherry

tbsp
olive oil
salt and pepper
to taste
chopped fresh herbs to garnish such as rosemary, sage, thyme or parsley

Instructions
Saute the shallots in a little of the olive oil over medium heat for 2 minutes
Add chopped chicken livers and saute for 2 minutes on each side. I sometimes cook them longer but be careful not to overcook them
Add the sherry and cook for 1 minute
Pour in the olive oil and some salt & pepper
Blend it up until smooth
Add more olive oil, salt, pepper or sherry to taste
Top with chopped fresh herbs if desired
