Chicken Liver Pate
A filling snack and a delicious way to support your adrenals!
Servings: 4
Equipment
- Immersion (hand) blender or food processor
Ingredients
- 1/4 lb chicken livers, chopped (ideally from a pastured chicken or at least organic chicken)
- 1 shallot, chopped
- 2 tbsp sherry
- 3 tbsp olive oil
- *optional - chopped fresh herbs to garnish such as rosemary, sage, thyme or parsley
Instructions
- Saute the shallots in a little of the olive oil over medium heat for 2 minutes
- Add chopped chicken livers and saute for 2 minutes on each side. I sometimes cook them longer but be careful not to overcook them
- Add the sherry and cook for 1 minute
- Pour the mixture into a glass pyrex measuring cup or bowl if using immersion blender or put into food processor
- Pour in the olive oil and some salt & pepper
- Blend it up until smooth
- Add more olive oil, salt, pepper or sherry to taste
- Top with chopped fresh herbs if desired
