Chicken Liver Pate

  • Immersion (hand) blender or food processor


  • 1/4 lb chicken livers, chopped (ideally from a pastured chicken or at least organic chicken)
  • 1 shallot, chopped
  • 2 tbsp sherry
  • 3 tbsp olive oil
  • *optional - chopped fresh herbs to garnish such as rosemary, sage, thyme or parsley


  • Saute the shallots in a little of the olive oil over medium heat for 2 minutes
  • Add chopped chicken livers and saute for 2 minutes on each side. I sometimes cook them longer but be careful not to overcook them
  • Add the sherry and cook for 1 minute
  • Pour the mixture into a glass pyrex measuring cup or bowl if using immersion blender or put into food processor
  • Pour in the olive oil and some salt & pepper
  • Blend it up until smooth
  • Add more olive oil, salt, pepper or sherry to taste
  • Top with chopped fresh herbs if desired
