Chocolate Zucchini Breakfast Bread

Ingredients
- 4 cups zucchini, grated
- 6 eggs (at room temperature)
- 6 tbsp coconut oil, melted
- 3/4 cup applesauce
- 2 1/4 cups almond meal
- 1/2 cup soy-free, dark chocolate chips
- 1/4 tsp baking powder
Instructions
- Preheat oven to 325 F.
- In a large bowl, whisk together eggs, coconut oil and applesauce.
- In a separate bowl, combine the dry ingredients: almond meal, chocolate chips and baking powder. Mix well.
- Slowly add the wet ingredients to the dry ingredients, stirring constantly.
- Continue mixing and add the grated zucchini.
- Pour the batter into a greased loaf pan.
- Bake for 50 minutes.
