Chocolate Zucchini Breakfast Bread

  • 4 cups zucchini, grated
  • 6 eggs (at room temperature)
  • 6 tbsp coconut oil, melted
  • 3/4 cup applesauce
  • 2 1/4 cups almond meal
  • 1/2 cup soy-free, dark chocolate chips
  • 1/4 tsp baking powder


  • Preheat oven to 325 F.
  • In a large bowl, whisk together eggs, coconut oil and applesauce.
  • In a separate bowl, combine the dry ingredients: almond meal, chocolate chips and baking powder. Mix well.
  • Slowly add the wet ingredients to the dry ingredients, stirring constantly.
  • Continue mixing and add the grated zucchini.
  • Pour the batter into a greased loaf pan.
  • Bake for 50 minutes.
