Ingredients

Lamb Ingredients

  • 1 1/2 lb fresh ground lamb
  • 1 1/2 cup chopped parsley
  • 2 eggs
  • juice of 1 lemon
  • 1/2 onion, minced
  • 1 tsp ground black pepper
  • 1 tsp ground coriander
  • 1 tsp paprika
  • 1 tsp ground celery seed
  • 12 skewers

Mint Pesto Ingredients

  • 1 1/2 cup mint leaves
  • 1 1/2 cup parsley
  • 1/2 medium onion
  • 2/3 cup pine nuts
  • 3 garlic cloves
  • 1/4-1/2 cup olive oil
  • 2 tsp lemon zest
  • 1 tsp sea salt

Instructions

  • In a food processor, combine all of the mint pesto ingredients. Add more oil if need be. Blend until smooth. Refrigerate.
  • In a separate bowl, combine all ingredients for the kebabs. Divide the mixture into 12 sections and form each section around the skewers. Grill until cooked (about 2 minutes per side…there are four sides to a kebab)
  • Serve and top with pesto.
