Lamb Kebabs with Mint Pesto

Ingredients
Lamb Ingredients
- 1 1/2 lb fresh ground lamb
- 1 1/2 cup chopped parsley
- 2 eggs
- juice of 1 lemon
- 1/2 onion, minced
- 1 tsp ground black pepper
- 1 tsp ground coriander
- 1 tsp paprika
- 1 tsp ground celery seed
- 12 skewers
Mint Pesto Ingredients
- 1 1/2 cup mint leaves
- 1 1/2 cup parsley
- 1/2 medium onion
- 2/3 cup pine nuts
- 3 garlic cloves
- 1/4-1/2 cup olive oil
- 2 tsp lemon zest
- 1 tsp sea salt
Instructions
- In a food processor, combine all of the mint pesto ingredients. Add more oil if need be. Blend until smooth. Refrigerate.
- In a separate bowl, combine all ingredients for the kebabs. Divide the mixture into 12 sections and form each section around the skewers. Grill until cooked (about 2 minutes per side…there are four sides to a kebab)
- Serve and top with pesto.
