  • 1 lb carrots, peeled & sliced into ¼ in. pieces
  • 2 garlic cloves, chopped
  • 2 sprigs rosemary, chopped
  • 1 tbsp olive oil
  • salt and pepper to taste


  • Preheat oven to 400
  • Mix olive oil, garlic, rosemary, salt and pepper into a bowl
  • Toss carrots into oil mixture
  • Place carrot mixture in a oven-safe glass baking dish or roasting pan
  • Roast for 20 minutes or until tender
