Our 5-year old has just gotten wind of St. Patty’s Day and he’s obsessed with both making sure he’s completely decked out from head to toe in green (I mean COMPLETELY from undies, to pants, to socks and shoes) and with the idea of green food.  So, I tested a meal out on him the other day to see what he thought of my thyroid and autoimmune friendly, Paleo St. Patty’s Day fare.  Well, I’m not one brag (that’s a total lie, I toot my own horn all the time) but this kid LOVED the menu and even helped me prep and cook it too!

This meal is delicious and nutritious and could even go well with a pint of Guinness (do they make a gluten-free version?)  😉

*Special note: the colcannon is a goitrogen bomb!  While I personally avoid goitrogenic foods (they rarely agree with me), they can definitely be part of a healthy diet for the thyroid and autoimmune sufferer provided they are well cooked (which they are in this recipe) However, if you’re watching the amount of goitrogens you consume, you may want to swap the Kale for Chard in the pesto and Colcannon and Cauliflower for New Potatoes in the Colcannon.
